Lazy Days are here again!

The next morning we awoke at 11:30. Ahhhhh… so nice to sleep in! It has become a tradition in Todd’s apartment to make pancakes with loads of stuff on top whenever there are guests, or it is a Sunday, or a Saturday, or if anyone feels the urge ;) and so I began to make pumpkin pancakes from a mix that Liz sent me in that amazing box of goodies. The pancakes were divine with bananas, syrup, brown sugar, cinnamon sugar and pretty much everything else sweet in the cupboards. Once we stuffed ourselves with pancakes and episodes of How I Met Your Mother, Anna and Todd proceeded to kick Steph’s and my bum at tennis. This form of entertainment didn’t last long as it was too much exercise for our still tired selves. We concluded this amazing day by buying prawns, salami, cheese and crackers at the store and going to Burleigh Heads to watch the surfers lap up every last bit of sunlight possible!
Monday and Tuesday we spent in true Surfers Paradise style. We went to the beach, watched the sunset over the canals and chatted for hours on end. I was fighting a cold and feeling quite sluggish but my naturopath roommate came to rescue once more with powdered vitamin C that managed to kick the cold (for the most part) right out of the park. I am going to fast forward a bit and say that today is the second day of Passover and I miss flying home from Berkeley for the holidays. One of the most memorable Pesachs I have ever had when we went to Grandma and Grandpa Sherry’s and Nancy made that INCREDIBLE chocolate mousse with pistachio crust… I still dream about that stuff, can you tell? ; )
I have also loved having friends over for Pesach (specifically non Jews) because they always get a kick out of the service and I love sharing my super rad religion! It definitely is harder celebrating Pesach and following the rules of kashrut without others around me doing the same but Todd has been very helpful and Becky (a friend I have known since pre-school!) is coming tomorrow so then we can make fun pesadic treats ;) Becky and I --->
With that I must get back to work. I have a final due date for my paper and it is due 66 days from now! Eep… I will discuss our AMAZING time in Sydney soon. Seriously, incredible city; look at my pictures on facebook if you don’t believe me! xox

  1. Loved the pictures. Drooling a bit over your pancakes. We make pretty good brunch pancakes too if I may say so myself!
